R.B. Davis Co. premium: cake knife with "Davis Baking Powder" & "Cocomalt" etched on blade. Issued by R. B. Davis Company, Hoboken, no date, circa 1930s. Bright metal blade with two-tone (green and cream) painted wood handle; overall 12-3/8" long; blade 1-1/4" wide x 8" long.
While commonly called a cake knife, it does not have a sharpened edge although it can cut can be used to cut cake. The flexible metal blade is a spatula or spreader and besides cutting cakes it is typically used for: help in removing cake from tins; spreading frosting; lifting cookies or baked goods such as muffins / cupcakes from pans or molds.
These products were the two major products made by the company in Hoboken. The markings are on opposite sides of the blade. Cocomalt is shown as the logo of the product and the baking powder name is in a typeface used by Davis. It is uncommon for both products to be promoted on a single item. Cocomalt which was a chocolate malted drink beverage can be found in recipe booklets separately issued for Cocomalt and Davis Baking Powder as an ingredient for frostings and some baked goods.
