Sepia-tone photo of the mixing room with troughs of fermenting bread at John Schmalz's Sons' Model Bakery, Hoboken, no date, ca. 1899-1909. 7-3/4" x 9-3/4" wide print. Photographer not indicated. Reverse is blank. The men are not identified.
One of seven undated photos, all in the same size and apparently taken around the same time (see related), with differing views of the bakery operations. The mixing room would have been on the second floor from the top of the building as the raw materials were stored on the top floor and fed to the mixers by the chutes that can been seen above the mixers. The mixers filled the metal troughs that when ready were moved to the molding room.
The building interior seen here is probably the fireproof building that replaced the one at the same location that burned down in 1909. The bakery buildings encompassed the block along the south side of Eighth Street between Grand and Clinton Streets.
